Ramen Hood, the popular vegan noodle shop from LA’s Grand Central Market, has taken up residence at Chefs Club Counter in NoLiTa, bringing a few surprises with it. One dish that should not be missed is the Ahi “Tuna” Crisps. These bite-size orbs made with a crispy rice shell are filled with a spicy beet purée, yuzu avocado spread, and sesame seeds. It’s like cracking into an egg and finding a delicious surprise. Very exciting. Speaking of eggs, the vegan egg at Ramen Hood is also worth noting because it’s not an egg at all. The whites are made with GMO-free soy milk, while the yolk is a mixture of nutritional yeast, black salt and sodium alginate. With a bit of hocus pocus it forms into a yolk in the center of the white. It's avaialble with several types of ramen, including Spicy Ramen in a sunflower broth (which seems quite popular), Garlic Ramen and Smoky Ramen made with a smoky onion broth. A Ramen Rice Bowl is also on the menu. All get sprouts, scallions, bok choy, King Oyster mushrooms, nori and chili threads. Also offered, a Banh Mi Poutine, Spicy Persian Cucumber Salad and Avocado Toast served on a crispy rice cake.
