Ramen Ishida is the eponymous ramen shop from chef-owner Yohei Ishida, formerly of Ippudo, who opened the restaurant in 2017 after more than 15 years in the restaurant industry. The menu centers on Tokyo-style ramen built around a clear chicken broth, a style Ishida grew up with and hopes to introduce to New Yorkers more familiar with tonkotsu. His signature Sh?yu Ramen combines chicken broth with soy sauce, truffle, and porcini mushrooms for a balanced umami flavor, while other bowls include Umami Miso with three kinds of miso, Spicy Mushroom ramen with six varieties of mushrooms, and Classic Shio made with chicken, fish, and pork. The menu also features appetizers like pork buns, karaage, and gyoza, along with vegan options such as edamame, sesame cucumber, and tofu ramen.
