TBD Gimbap is a casual Korean spot in the West Village specializing in gimbap, the popular Korean staple made by rolling seasoned rice and assorted fillings in sheets of dried seaweed before slicing it into bite-sized pieces. Located on Carmine Street, TBD offers several takes on the classic, including beef bulgogi, spicy pork and tuna mayo gimbap. Portable, satisfying and made for an easy lunch or snack, the colorful rolls offer the neighborhood a taste of one of Korea’s most beloved everyday foods. Chef Jihan Lee and the team behind Nami Nori are behind the venture.
