Hwaban means "beautiful as a flower" and that is what you will find at this modern Korean restaurant in Flatiron. Chef/restaurateur Mihyun Han and her husband/partner Key Kim have created Hwaban, offering authentic South Korean foods using elevated techniques. Executive Chef Woong Jang is heading the kitchen. Dishes include a salad of lotus roots with baby greens and fresh flowers; scallop crudo with Korean pear, abalone with mushrooms in a dried baby sardine broth; and king crab in a pine nut sauce with poached organic egg. Larger plates bring pan-seared sea bass with pickled onions and mushrooms, gochujang braised chicken with root vegetables, marinated & de-boned short ribs fresh off the grill, and pork belly with kimchi. Hwaban Table allows diners to share an assortment of dishes for $75 per person. There is also Red Ginseng Chicken Soup with abalone. The dish must be ordered two days in advance and costs $45.
