Laut, a popular spot for Malaysian, Singaporean and Thai cuisine, continues to deliver authentic dishes that pile on the heat. The eclectic spot, with exposed brick and murals, is also known for cocktail glasses featuring dancers on stripper poles. The excitement extends to the food as well. Coconut soup with lemongrass and dumplings shimmers with a slick of chili oil. Freshly made roti (flat bread) arrives with a spicy curry sauce. One version, Murtabak, is infused with ground beef, onion and spices. It’s also delicious. Satay is served several ways, including tandoori style, resulting in bright red pieces of skewered chicken. It's served with chunks of cooling cucumber. Indian influences are also found in the Massaman curry made with coconut milk, carrots and sweet potato. We tried it with squid, which is quite good. It is also available with crispy chicken, beef, shrimp and soft shell crab. Noodle soups include Asam Laksa, a favorite of the late Anthony Bourdain made with a sour, spicy, sweet, umami, fish broth that is a staple of Penang. Any praise for Laut is well deserved.
