Fax: From Chef Ashley Eddie, Santina: Pumpkin seed pesto Rigaton. This dish was inspired by a pumpkin menu we were working on. But instead of the obvious route of using actual pumpkin, I decided to use pumpkin seeds and oil which both pack a ton of flavor.

Santina, from the Torrisi team, is a restaurant shaped like a glass cube beneath New York City's High Line. It's named after partner Mario Carbone's Sicilian grandmother and features the foods of coastal Italy. Dishes like artichokes and grapes, house anchovies, spaghetti blue crab, and wild rice calamari are among the offerings. It's also a great spot to catch a drink at the bar. Cocktails include the Salerno Sling made with gin, blood orange and cherry, along with a Basil Bellini.
