Faun in Prospect Heights has one of the city’s most exciting and inexpensive natural wine lists offering many bottles under $50. Curated by Bill Fitch (Vinegar Hill House), the eclectic list of small organic and biodynamic producers spans Europe and the United States with some unusual selections that encourage wine exploration, from a lightly sparkling orange wine from Greece to a white made with the rare turbiana grape from Lombardy, Italy to reds from the Czech Republic and more. The backyard garden—which abounds with herbs, fruit and vegetables that make their way into Faun’s dishes and cocktails—is a beautiful place to relax with a glass. Wednesday is a prime wine drinking day: any bottle can be open when guests commit to a half (two glasses), providing a great opportunity to try wines otherwise only available by the bottle. Thursday is even better for exploring unfamiliar wines – anything opened on Wednesday is poured by the glass.
