From Michelin-starred Laut comes Laut Singapura in Flatiron bringing the vibrant flavors of Singapore to New York City. Laut, which means the “sea” is big on fresh seafood like giant dungeoness chili crab meant for sharing. Blue Claw crabs provide a less expensive alternative. Both require getting your hands messy. Another hands-on dish is the Salty Egg Prawns. These monster, crispy head-on prawns arrive in a salted duck egg sauce infused with curry leaves and egg floss. They require a bit of work, but the flavors are intense and worth the effort.  Also worth seeking out is the Grilled Tumeric Fish. It’s light and delicate with crispy skin served with a sweet and spicy chili sauce. Several types of roti are also offered. The Indian pancakes are pulled apart and dunked into a curry dip. Beef and vegetarian options are available. Dim Sum arrives on a mother of pearl plate with crispy spring rolls and two types of dumplings. Salads include Mango Kerabu with sour mango, mint and cucumber in a tamarind dressing. Noodle soups, like Prawn Me, are offered. It’s made with a shrimp-head broth, prawns and spare ribs. Several rice dishes also make an appearance on the menu along with traditional drinks like Thai Iced Tea.  The restaurant also has an eye on service with the staff willing to go the extra mile for their guests.  Laut Singapura is a definite must-try restaurant.
