Naks, part of the Unapologetic Foods collective, is Chef Eric Valdez’s deeply personal tribute to the flavors of his Manila upbringing, pushing Filipino cuisine into a bold new era in New York. Named after the Pinoy expression of admiration and surprise, the restaurant delivers that sentiment in every dish, from its cult-favorite KFC (Kanto Fried Chicken) and Inihaw na Liempo to a rich, braised-beef Kare-Kare peanut stew. Weekend brunch leans into Filipino-American comfort with plates like Crab Omelette in coconut sauce, Salted Egg Pancakes, and a Classic Filipino Platter with garlic rice, fried egg, tofu, pickled papaya, and bone broth. Valdez, who tattooed his mother’s name in Alibata script as a reminder of her constant presence in his cooking, sees Naks as a love letter to both the refined hotel dishes of his childhood and the soulful home cooking that shaped him, helping Filipino food claim its rightful space in the national culinary conversation.
