Walking through the holiday market at Bryant Park we were stopped by a Frenchman asking us to try his truffles, and then he said, "no chewing allowed."  Initially, I walked away.  But after taking a few steps I decided to return.  I was intrigued.  After all, how difficult could it be?

Before taking a sample I was handed these instructions; "Squeeze it gently between your tongue and upper palate.  It will start to melt immediately.  Move it around in your mouth and feel the rich flavor come alive."  So, I did.

It's not as easy as it sounds, avoiding the temptation to take a bite and achieve instant gratification.  It's sort of like that wise old owl asking, "How many licks does it take to get to the center of a Tootsie Roll pop?"  I believe it took three before he gave in.  It is the same concept here.

So, I placed the small piece of truffle on my tongue.  The first thing I noticed was the dryness of the cocoa powder.  It was slighty bitter.  Then the chocolate truffle began to melt away.  It was rich and creamy with a subtle sweetness, and in this case, hints of hazelnut.  I don't even like hazelnuts, but I liked this.  

It also serves as a reminder to take time out of our busy lives and really savor the moment.
