At Noodle Edition, look for noodle dishes representin distinct regions of China reflecting months of road trips. There are six noodle dishes to start: Scallion and Shrimp Noodles from Shanghai, Beef Offal Noodles from Xinjiang, Stir-Fried Udon from Shanghai, Dan Dan Noodles from Chongqing, Sizzling Sesame Noodles from Wuhan, and Tingly Pork Noodles from Chengdu. Soon to follow, Noodles with Gravy from Beijing, and Hot Oil Noodles from Xi’an, among others. Side dishes include Marinated Cucumber, Crispy Pork Cutlet, and Wakame Bone Broth.

Aside from a citywide delivery network, Noodle Edition boasts 1600 sq ft of contactless space. Customers can order from a self-service kiosk or at a windowed counter and pick up their food at a nearby station. The 25-seat restaurant was designed by Tal Schori and Rustam-Marc Mehta of GRT Architects, whose restaurant portfolio includes Bourke Street Bakery, Leonti, and Don Angie.
