Papilles is adding some French flare to the East Village. Chef Andrea Calstier was classically trained in France but refers to his style of cooking as "cuisine vagabonde." Dinner brings dishes like Rabbit Saddle Ballotine with a rhubarb-balsamic chutney, mustard whipped cream and olive oil brioche; Slow-Poached Cod mingles with orange beurre blanc, Persian black lemon and baby artichokes; and Roasted Guinea Hen gets a carrot-bermamot puree, seared scallion and sour jus. Desserts include Kalamansi Crémeux with French meringue, sablé Breton and basil oil. The restaurant is petite with a curved wooden bar up front, counter seating as well as tables with plush blue seats and an open-air kitchen in the back. A tasting menu is also available with wine pairing.
