When Chef Harold Dieterle decided to get back to his roots, he settled on the West Village, opening The Marrow, and drawing inspiration from his German father and Italian mother while adding a modern twist. It is here where you will find the former Top Chef cooking up dishes like bone marrow with see urchin and fried potatoes, and braised brisket "braciole" with house ground polenta. Grilled specialties include a 40-day aged ribeye and wagyu culotte. But it's not just limited to beef. The menu also features a pan fried duck schnitzel, braised cuttlefish and pickled herring with roasted baby beets and horseradish cream. The 400-plus wine list also finds inspiration from regions of Italy, Germany and Austria. Seasonal cocktails and craft beers are also available. The space seats up to 70 diners with red leather banquettes and butcher block tables, with plans for a private room downstairs.
